Warm chocolate puds
I’m not sure where i picked this recipe up from – it’s one I’d made a note of some time ago. I have yet to perfect it. My timing is a bit out and they need to be a little softer in the middle. They are dead easy but i think if you’re using a fan assisted oven you should take a few minutes off the time, say 10 minutes instead of 13. I love the texture and they are very chocolatey and quite impressive at a dinner party. This recipe makes six:
185g unsalted butter
3 tsp plain flour (plus extra for moulds)
185g dark chocolate broken into pieces
3 large eggs
3 large egg yolks
4 tbs caster sugar
cocoa powder to serve
Heat the oven to 220 degrees (I’d suggest not using the fan). Grease and flour six 1/2 cup/125 ml moulds (ramekins), shake off excess flour and repeat. Place on a baking tray.
Melt the butter and chocolate together over simmering water – making sure the bowl does not touch the water. Combine the eggs, yolks and sugar in a bowl with an electric mixer (or be hard-core) until light and thick (takes a few minutes). Add the chocolate and butter mixture and beat until smooth, add the flour and combine.
Divide among the moulds and bake for 13 minutes or until they have risen at least 1cm above the rim and the sides are frim but centres soft.
Turn upside down on to plates and leave for 10-20 seconds then carefully remove the moulds, dust with cocoa and serve immediately with cream or ice cream.
