Fork Biscuits
I really fancied making some biscuits with minimal effort and these Mary Berry lemon fork biscuits were just the job. They were especially lovely whilst still slightly warm (not too warm however or they won’t be firm enough). Think I’d double the quantity next time, this makes about 16. You can substitute the lemon rind with the grated rind of a small orange for a different flavour.
100g butter, softened
50g caster sugar
grated rind of a lemon
150g self-raising flour
Pre-heat the oven to 180 degrees and lightly grease two baking trays.
Measure the butter into a bowl and beat with a wooden spoon. Gradually add the sugar and rind then add the flour. Bring the mixture together with your hands to a firm dough. Make walnut sized balls and place on the baking trays, well spaced apart. Use a fork dipped in water to press down and flatten the balls.
Bake for about 15-20 minutes, until very pale golden brown. Lift of the baking tray and leave to cool completely (if you can wait!) on a wire rack.
