Granola cookies

This was a suprisingly successful experiment.
I make granola for breakfast, using this recipe:
4 cups rolled oats – porridge, jumbo or a mix, 2 cups bran, 2 cups milk powder, Pinch of salt, 2 cups chopped almonds, 350ml sunflower oil, 350ml runny honey, 2 t vanilla essence, 1/2 t almond essence, Dried fruit.
You mix up the oats, bran and powdered milk in a large roasting tray. Mix the oil, honey and essences and pour over. Roast this mix at an oven on 150C ish (it’s good, say, after you’ve been baking and the oven is already hot) until browned. In a seperate tray, roast the nuts until brown. When they’re both done, mix them and allow to cool, then add whatever dried fruit you like.
Anyway, I was making up a fresh batch, and still had some of an older batch left. Rather than just mixing them together, I used the remains of the older batch for some cookies. I can’t remember the exact quanties I used, but basically I just melted some butter, say around 100g, some soft brown sugar, say 60g, and a few tablespoons of golden syrup in a large pan. I then beat in 2 eggs (or was it 1?), the old granola (a cup or two), and some plain flour (say 150g), sifted together with 1t baking powder I think. It was a bit of a hodge-podge, but a very forgiving kinda mix. Baked on greased sheets for 15 mins or so at 180C, they came our rather nicely. Ideal biscuits to get one through a long day of physical labours…
